We asked for suggestions on which desserts we should make next and had a ton of people suggest s’mores desserts and/or Tres Leches. So we present to you our S’mores Tres Leches. The ultimate mash up!
CAKE:
1 cup cake flour
1 cup all purpose flour
2 tsp baking powder
1 tsp salt
1 3/4 cup sugar
4 eggs
8 tbsp butter
1 cup milk
2 tsp vanilla
MILK MIXTURE:
14 oz condensed milk
12 oz evaporated milk
1 1/2 cup heavy cream
1/2 cup melted Nutella or melted chocolate
FROSTING:
4 egg whites
1 cup sugar
1 cup corn syrup
1/2 cup water
1/2 tsp Cream of tartar
Crushed Graham crackers
CAKE:
- Preheat your oven to 350F and grease either a 9×13 or 9×9 pan.
In a small bowl, combine the milk and butter then microwave for 60 seconds and set aside.
In a medium bowl, combine flours, salt and baking powder and set aside.
In a large bowl, beat the eggs and vanilla until frothy then add sugar in two intervals while continuing to beat. Beat for a couple of minutes until thick.
Add in the butter/milk mixture and combine. Then add the flour mixture in three intervals beating well in between.
Scrape the sides of the bowl to incorporate the batter together and pour into your prepared pan(s).
Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool for 5 minutes then poke small holes into the cake and allow to cool 5 more minutes.
In another bowl, whisk together condensed milk, evaporated milk, heavy cream and melted Nutella or chocolate.
Pour the mixture over the cake slowly to allow it to absorb fully (don’t be like me and try to rush this part or your cake might not be as drenched). Place the cake in the fridge uncovered for at least 2-3 hours.
FROSTING:
In a large bowl beat the egg whites and cream of tartar until stiff peaks then set aside.
In a sauce pan over medium heat, combine water, sugar and corn syrup. Continue cooking until 230F then remove from heat.
While beating egg whites, pour the syrup mixture into the egg whites slowly. Keep beating for a few minutes until nice and thick.
Add a thick layer over the cake, sprinkle crushed graham cracker on top then torch!
