STRAWBERRY CHEESECAKE CRUMB BARS
These are the perfect strawberry summer treat (or any time of the year really). The flavors of the crumb dough, cheesecake and strawberries really come together. Definitely at the top of the list for things we’ve made so TRY it for yourselves!
Dough:
1 1/2 cups flour
1/2 cup granulated sugar
1 beaten egg
2 tsp vanilla
1/2 tsp baking powder
1/2 tsp salt
1/2 cup cold butter cubed
Filling:
2 1/2 cups chopped strawberries
1/2 cup granulated sugar
2 tbsp brown sugar
1 tbsp cornstarch
4 oz softened cream cheese
1. Preheat oven to 375F.
2. In a large bowl combine flour, sugar, salt, and baking powder then add your butter.
3. Using a masher or fork combine the mixture until crumbly. You may need to use your hands then add in your beaten egg and vanilla.
4. Mix until well combined and crumbly again.
5 Pour half the mixture into a 8×8 pan lined with parchment paper pressing down.
6. In a medium bowl, combine all the filling ingredients until well mixed.
7. Pour on top of the crumb mixture in the pan then add the remaining crumb dough on top. It’s okay if there is filling showing.
8. Bake for 50 minutes then allow to cool completely before slicing.
